Vegetarian Chickpea Tacos

Chickpeas
 2 ½ cups Canned Chickpeas, rinsed and drained
 1 tbsp Olive oil
 1 ½ tbsp Taco Seasoning
Tacos
 2 cups Rocket, rinsed and dried
 1 Cucumber; sliced
 2 Green onions; sliced
  cup Walnuts; toasted and roughly chopped
 2 tbsp Sesame seeds
 4 Gluten free tortillas
Dressing
 ¼ cup Greek yogurt
 1 ½ tsp Apple cider vinegar
 1 ½ tsp Dijon mustard
 ¼ tsp Turmeric
 1 tsp Honey

Preheat the oven to 200 degrees C.

Pat the chickpeas dry with a paper towel.

Combine the chickpeas, olive oil and seasoning in a bowl, mix so chickpeas are coated well.

Line a baking tray with nonstick baking paper and spread the chickpeas in an even layer.

Bake in the oven for approximately 40 minutes or until crispy.

When done remove from oven and set aside.

While the chickpeas are cooking prepare all your other taco ingredients.

To make the dressing add all the dressing ingredients to a small bowl, whisk together until well blended. Alternatively, combine all ingredients in a small jar, secure lid and shake until blended.

Just before serving, heat/cook the tortillas as per packet directions.

To serve, add some fresh rocket, sliced cucumber, green onions, chopped walnuts and some of the crispy taco chickpeas. Sprinkle over some sesame seeds and drizzle a little dressing on top. Enjoy immediately!
